サルティンボッカ 【Salutimbocca】

仔牛肉(塊)   400~500g
生ハム      5枚
セージ      5枚
塩・胡椒     各少々
小麦粉      適量
オリーブオイル   大さじ2

バター      20g
白ワイン     大さじ2
レモン半月の薄切 1/2個分程度

【調理工程】
① 仔牛肉は、5等分に薄切し、肉たたきで薄くのばし、生ハムを広げて乗せ、
  上にセージを乗せ、塩・胡椒し生ハムの無い面に小麦粉をつける。

② フライパンにオリーブオイルを軽く熱し、バターを入れて溶かし、
  ①の生ハムのほうからさっと焼き、返して生ハムの面を上にしてから火を通す。

③ 焼き上がりを取り出して盛り付け、フライパンに残った焼き汁にバター、
  白ワインを入れて軽く煮詰め、盛り付けた上にかけたらレモンを添える。
